Canon Character Development

yonkyuI know most people in my support group of people when it comes to writing will be mad at me for asking, but I can't help it. It bothers me like you would not believe. I just have this strong gut feeling that I truly don't know or understand the character at hand. I have to do more research and take in depth notes to get a better sense of this gentleman. Call me stupid or whatever, but get bothers me and I get easily upset over it.
I am struggling with character development and character realism from canon. I'm trying to explore and work through my issues of making Dean too sensitive, too soft, and making him wear his feelings for all to see.
Does anyone have any suggestions that would be helpful in making him tougher, less sensitive, and keeping his feelings on the inside? What characteristics would you concern for Dean? What ways can I improve my version of Dean?
